As a veteran butcher and primary contributor to meatshop101.com, it is of utmost importance to me that you are confident in the resources available here. So maybe a little about my experience and history in the meat business will help…
Way back in my high school days, I worked sacking groceries at a local supermarket in my hometown of Crossville, Tennessee. It was quite busy at the store one summer afternoon, and my manager asked that I go back to the meat department and help out. “What should I do back there?” I asked – a little nervously – never having set foot in a meat shop before. “Whatever they need..” To my surprise, I found the work very interesting and wanted to learn more. I put my heart into it and soon gained the trust of the meat market crew – not an easy thing to do because meat cutters, by and large, are a rugged bunch and a tight community. Soon after, my manager offered me a full-time position in the meat market. I took it.
Though I didn’t know it then, that fateful summer day had set me on a path. Over the next 20 years, I would bloody my hands for six regional and national grocery chains, including stints as meat market manager, bringing me invaluable experience in the trade. Proudly, I also served as Meats Production Manager for a Fortune 500 wholesale distributor based in Richmond, Virginia.
I include this little bit of history because I want all my visitors to meatshop101.com to know this: you can trust and rely on the help and information available here. Since I no longer pick up a knife every day, meatshop101 will be my little meat market now, and I want all of you to share it with me! And as you like, you can help me build it with your comments and suggestions!
